I’m not kidding guys this really is the best chicken nacho recipe ever and you can customize it to fit exactly what your family or friends love. I made this the first time because the Kiddo really wanted nachos from a restaurant and I did not have the time or money to waste. I started with small basic Nachos with chicken, cheese and tortilla chips and then started customizing adding refried beans and olives. The beauty is that if you like jalapeno – add them. If you do not like beans do not add them. I get requests for these nachos for almost every party. The Kiddos friends as if we are having nacho’s when they are deciding which day to hang out. Todays Mouthwatering Monday Recipe is Crockpot Pot Roast. How wonderful is coming home to a fully cooked meal? One of my favorite kitchen gadgets is the crockpot specifically for that reason. I can prep the meal the night before and then put it all together in the pot the next morning. By the time I get home from a full day, tada, dinner is ready. Crockpot meals are even better now that I am home schooling the Kiddo because my hours doubled and time is non-existent now. Quick, Easy, and Delicious are the name of the game.

One of my favorite recipes for the winter season is Bread Pudding. There is something about the warm comfort of a rich bowl of Bread pudding that makes a cold winters day exceptional.

My family likes this Caramel version so much that I did not even get a chance to take a picture of the final result. Seriously, I was so super mad, but I was also proud of the recipe and that everyone liked it so much.

This is one of those recipes that you make when you know someone needs a hug. Yes, I said it, this is the food equivalent of a bear hug. It warms you from the inside out. You are happy to sit, smell the vanilla sauce and melted caramel, and just be present. For an added kick and crunch add slivered almonds to the top 5 minutes before you take the pudding out of the oven. The almonds brown and add a depth to the dish.

You can substitute chocolate chips or raisins for the caramel.

The most important steps in a well made bread pudding are:

  1. Use a good bread and leave it out to get stale. Fresh bread does not absorb the liquid well and stale bread does.
  2. Mix the liquid ingredients until they are frothy and fold the mixture into the bread to be sure that all of the bread is coated well.
  3. Mix a second time (carefully) before baking to reincorporate the caramel chips.
  4. Let the mixture rest in the refrigerator over night. This allows the bread enough time to absorb every bit of liquid.

Ingredients
Bread Pudding
Vanilla Sauce
Servings:
Instructions
  1. Use Day old bread. Cube bread and add it to a large baking dish Set aside.

  2. Mix together liquid ingredients, sugars, Pumpkin spice and eggs with an electric mixer. Add mixture to the Bread and mix in Caramel chips. For best results let the liquid absorb overnight. (8-10 hours)
  3. The next day (8 - 10 hours later) Stir the mixture to reincorporate the ingredients. Bake at 375* for 40 -50 minutes or until golden brown.
  4. Vanilla Sauce: Bring all ingredients except vanilla to a full boil for 5 - 8 minutes then add the vanilla.
  5. Pour the Sauce over the pudding and serve.

This Mouthwatering Monday Simple Chess Pie Recipe is the first pie I ever learned to make. I love this pie just as much today as I did as a child. The recipe is one of those that many generations of Moms, Nanas, Nannies, and grandmas passed down and now I’m sharing it with you. The only difference from their recipe and mine is that they did not whisk the eggs to a fluffy consistency before adding the sugar and butter. Believe me the fluffy eggs make the pie texture better.

Recipe:

1 1/2 cups Sugar
1/2 cup Butter
3 Eggs
1 tbsp Vanilla
1 Pie crust premade, frozen or homemade

Mix the eggs and vanilla with a hand mixer, stand mixer or whisk.

Whisk until thick and frothy.

In another bowl melt the butter and add it to the sugar.

Slowly incorporate the sugar and butter mixture in to the egg and vanilla mixture a little at a time. Whisk well to incorporate and to keep the mixture fluffy.

Prep the pie crust by using a fork to dot the crust . This keeps the crust from filling with steam and expanding while the pie bakes.

Pour the pie batter into the shell and bake at 350* for 45 – 60 minutes. Oven temperatures and times may vary.

This is yet another of my Brother’s yummy breakfast recipes. There was such a great response to his Bacon Egg and Cheese Croissant Cups that he agreed to make another recipe for Mouthwatering Monday the Bacon and Sausage Hashbrown Casserole. This stuff is delicious and is a meal in its self and makes a great side dish to bring to a pot luck brunch. The beauty of a recipe like this is that you can customize it to fit your mood or tastes. If you do not like sausage add more bacon. If you want veggies add veggies onions are delicious. Choose your favorite cheese and add as much as you like to the top.

Recipe:

Mouthwatering Monday Bacon and Sausage Hashbrown Casserole Recipe from H&P Artistry

1 bag of Hashbrowns
1 lb sausage
4 strips of bacon
4 eggs
2 cups of cheese
1 1/2 cups milk
salt and pepper to taste
9″ x 13″ pan
Bake 350* for 45 – 60 minutes

Cook the bacon and sausage until almost completely well done They will continue to cook in the casserole.

Spray the pan with non stick cooking spray.

Break up the bacon and sausage into small pieces.

Mix the eggs milk salt and pepper whisk well and set aside for later.

Layer 1 – Spread half of the frozen to partly thawed hashbrowns in the bottom of a 9″ x 13″ pan.
