I’m not kidding guys this really is the best chicken nacho recipe ever and you can customize it to fit exactly what your family or friends love. I made this the first time because the Kiddo really wanted nachos from a restaurant and I did not have the time or money to waste. I started with small basic Nachos with chicken, cheese and tortilla chips and then started customizing adding refried beans and olives. The beauty is that if you like jalapeno – add them. If you do not like beans do not add them. I get requests for these nachos for almost every party. The Kiddos friends as if we are having nacho’s when they are deciding which day to hang out. Todays Mouthwatering Monday Recipe is Crockpot Pot Roast. How wonderful is coming home to a fully cooked meal? One of my favorite kitchen gadgets is the crockpot specifically for that reason. I can prep the meal the night before and then put it all together in the pot the next morning. By the time I get home from a full day, tada, dinner is ready. Crockpot meals are even better now that I am home schooling the Kiddo because my hours doubled and time is non-existent now. Quick, Easy, and Delicious are the name of the game.

Pita Bread Personal Pizzas

This weeks Mouthwatering Monday Recipe is Pita Bread Personal Pizzas. We love mini pizzas (or any pizza really) in my house. I try to find fun yet easy ways to make pizza without buying the frozen stuff. You can use any ingredients that you like but I made these for the kids and pepperoni and mushrooms won the vote. I plan to make a Hawaiian pizza on my next day home alone. This is also a recipe that is quick enough to make one pizza at a time and that is a time and food saver. When I have all the kids over they can make their own pizzas exactly the way they want.

One of my favorite meals for Fall is a good chili with beef and beans. I tend to like chili with a kick but a few of my favorite people do not so my basic chili recipe can be adjusted to fit any pallet. If you like spicy add some green chilies or jalapenos, I like red pepper flakes. I wanted to share the basic recipe so that you can build on it and make your own. This is yet another of my Brother’s yummy breakfast recipes. There was such a great response to his Bacon Egg and Cheese Croissant Cups that he agreed to make another recipe for Mouthwatering Monday the Bacon and Sausage Hashbrown Casserole. This stuff is delicious and is a meal in its self and makes a great side dish to bring to a pot luck brunch. The beauty of a recipe like this is that you can customize it to fit your mood or tastes. If you do not like sausage add more bacon. If you want veggies add veggies onions are delicious. Choose your favorite cheese and add as much as you like to the top.

Recipe:

Mouthwatering Monday Bacon and Sausage Hashbrown Casserole Recipe from H&P Artistry

1 bag of Hashbrowns
1 lb sausage
4 strips of bacon
4 eggs
2 cups of cheese
1 1/2 cups milk
salt and pepper to taste
9″ x 13″ pan
Bake 350* for 45 – 60 minutes
Oven temps and times may vary

Cook the bacon and sausage until almost completely well done They will continue to cook in the casserole.

Spray the pan with non stick cooking spray.
