Cheesy Garlic Baked Potatoes Recipe
For Mouthwatering Monday this week I decided to share my Cheesy Garlic Baked Potatoes Recipe. I started making this recipe in High School and it was always a favorite. Yet again this is a recipe that you can dress up or dress down. Add bacon and sour cream, use less garlic and more onion, whatever your family likes best.
4 baking Potatoes
2 cloves garlic minced (substitute garlic powder if you want)
1 tbsp dried Onion or 2 tbsp finely minced fresh onion
1 cup of your favorite shredded cheese
4 tbsp butter
salt and pepper to taste
Trim one side of the potato the help it lie flat and not roll around on your cutting board. You want the potato stable when cutting.
Place a butter knife, wooden spoon, or spatula on both sides of the potato. This will help you to cut the potato slices without cutting the potato in half.
Cut thin slices into the potato. Be careful not to cut all the way through the potato. The utensils help but you also need to cut carefully. Be careful not to cut yourself.
Put the Potatoes in a greased baking dish and add 1 tbsp of butter to each potato. Salt and pepper to taste. You can put the pieces of potato you cut off of the bottom of the potatoes or and loose slices in the pan as well.
*If using garlic powder add it now.
Bake the potatoes at 400* until almost completely done. About 30 minutes, check tenderness with a fork.

Top with the garlic and onions. Press the garlic and onions in between the slices.
Add your favorite shredded cheese. I used Cheddar and Colby. Make sure to get the cheese between the slices of potato.
Bake for an additional 15 minutes or until the potatoes are soft and the cheese is melted and slightly browned. If the cheese is browning too fast (potato cooking to slowly) cover the baking dish with aluminum foil to prevent the cheese from over browning.
I served mine with lime glazed pork chops and baby peas. To make the side into a meal in itself add bacon pr shredded chicken between the slices. Top with scallions, mushrooms, and mix the cheese with sour cream. The sour cream adds moisture to the potato and blinds all the flavors.
