Crockpot Pot Roast
Todays Mouthwatering Monday Recipe is Crockpot Pot Roast. How wonderful is coming home to a fully cooked meal? One of my favorite kitchen gadgets is the crockpot specifically for that reason. I can prep the meal the night before and then put it all together in the pot the next morning. By the time I get home from a full day, tada, dinner is ready. Crockpot meals are even better now that I am home schooling the Kiddo because my hours doubled and time is non-existent now. Quick, Easy, and Delicious are the name of the game.
1 Medium Pot Roast
1 Bag baby Carrots
3 Large Potatoes chopped
1/2 Onion diced
1 cup beef broth
1 tbsp Worcestershire Sauce
1 tbsp Flour
Season the roast with your favorite seasoning rub. I like a good spice rub with garlic, cracked pepper and onion salt. If you like a little heat add a teaspoon of red pepper flakes a more herb intense flavor add rosemary or oregano.
Caramelize the onions . Cook the onions to a clear golden to dark brown. You can use oil, cooking spray, or butter.
Sear the roast on all sides. I use the same pan that I used to caramelize the onions and set the heat to high. Sear each side of the roast for 60 seconds. Searing adds a depth of flavor to the roast.
Mix 1 cup of beef broth and 1 tbsp of Worcestershire sauce. You can use water instead of beef broth or not add the Worcestershire sauce if you don’t like the flavor. Remember the beauty of cooking is that you can make the meal the way you want.
Deglaze the pan with the broth and add 1 tbsp of flour to the mix. Whisk constantly until the mixture is smooth. Add more broth if needed. Add a little of the flour at a time to keep the gravy from becoming lumpy.
Layer the potatoes, carrots, and half the onions in the bottom of the pot with the roast on top. Top with the remaining onions and gravy. Cook on high for 4 hours or on medium for 6 to 8 hours.
Stir the roast and veggies. The roast should begin to fall apart on its own all you have to do is shred the roast as needed.
Serve and eat. The Kiddo is picky about her food not touching so she separates the meat and veggies. You can also serve it in a bowl. The Rosemary Cheddar Cheese Bread is a great addition to any roast.
