This weeks Mouthwatering Monday Recipe is Peanut Butter Frosting. This is a family favorite that I make for special occasions and when I get a craving for something decadent and delicious. The frosting is super rich and it doesn’t take much to satisfy a craving. I haven’t tried it with other nut butters but I bet cashew and almond would be wonderful. I use a stand mixer but you can use a hand mixer just as easily.

*This is a peanut product do not try if you have an allergy to peanuts.

2 cups Powdered Sugar Sift after measuring
1 cup creamy Peanut Butter
1/2 Cup Softened Butter
1 – 3 tablespoons Water or Milk
1 teaspoon Vanilla

Start by Creaming together the vanilla and softened butter.

Once the butter and vanilla are smooth and creamed together add the peanut butter and mix well.

Add 1/3 cup of the sifted sugar at a time. Adding too much at once will lead to a sugar-coated kitchen and not much in the frosting. mix well before adding the next 1/3 of a cup.

Continue adding sugar and scraping the bowl as you mix.

Add water as needed to smooth out the frosting up to 3 tablespoons. Add a little at a time so that you don’t end up with a runny frosting. If you do add to much water (or milk) just add a little more powdered sugar until you get the consistency you want.

Mix until you get a nice smooth frosting.

Prep a piping bag with your favorite tip or smooth on with a spatula. I bought premade brownie bites and pipes the frosting on top. This is a great way to make store-bought goodies your own.

I had left over frosting and frosted a few cookies for my brother. Store the left over frosting in the refrigerator for up to a week.

If you are piping on cupcakes or brownie bites an added bit of deliciousness is to fill the centers with Melba sauce or fruit and call them PB&J bites or cakes. If frosting a cake make a ring of frosting around the edge of the center inside layer and fill it with your favorite fruit jam. Frost the cake a usual. People will love it.
