The Mouthwatering Monday Recipe this week is Pineapple Raspberry Lemonade Freeze. This is the kind of drink that works for everyone in the family. It can be made as alcoholic or non alcoholic and the fruit and liquid used can me adjusted to taste. My 6 year old niece helped me make this batch. This is a great drink to serve on a hot summer day and perfect for the fourth of July. Trade out the pineapple for blackberries or blueberries to have red and blue drinks for the holiday.

2 cups of ice
1 12 oz can of frozen raspberry lemonade
1/4 cup cubed pineapple
1/4 cup raspberries
Optional: a few sprigs of mint
1/4 – 1 cup Liquid – Coconut water, Pineapple Juice, Water, Soda, Champagne

Blend

Add 2 cups of ice. More if you want a thicker consistency.

Add one 12 oz can of Frozen Raspberry Lemonade. You can make a liquid lemonade and freeze it in ice cube trays instead of using the frozen mix.

Add raspberries and pineapple to taste. Substitute frozen fruit for a more slushie texture. Add a few sprigs of mint for a smooth flavor. The mint tends to cut the acidity of the pineapple.

Add 1/4 to 1 cup of liquid depending on thickness. Pulse until smooth and the desired thickness is reached. I used 1/4 of a cup of water for my batch.

Serve with fresh fruit garnish. My niece and I had a glass and I froze the rest of the batch for later.

You can make the drink a day or two before and freeze in Popsicle molds or ice cube trays and blend again before serving. If serving with champagne place cubes or Popsicle in champagne glass and pour champagne over them. You can also make the mixture as above and mix the champagne in at the last-minute.
