The Best Chicken Nacho Recipe
I’m not kidding guys this really is the best chicken nacho recipe ever and you can customize it to fit exactly what your family or friends love. I made this the first time because the Kiddo really wanted nachos from a restaurant and I did not have the time or money to waste. I started with small basic Nachos with chicken, cheese and tortilla chips and then started customizing adding refried beans and olives. The beauty is that if you like jalapeno – add them. If you do not like beans do not add them. I get requests for these nachos for almost every party. The Kiddos friends as if we are having nacho’s when they are deciding which day to hang out. I hope you enjoy them as much as we do.
1 -2 bags tortilla chips
2 cups shredded lettuce
2 tomatoes diced
Peppers and garlic to taste
1 pound chicken
1 packet of taco seasoning
1 can refried beans
1 box Spanish rice
1 jar caso blanco cheese dip
1 jar salsa
2 -4 cups of shredded Mexican cheese
1 small can chopped black olives
Cook the chicken and taco seasoning following the packet instructions. shred or chop the chicken.
Prep or heat the rice and refried beans. I add 1 tbsp of the salsa and cheese to the refried beans to help thin the mixture a bit. This makes spreading the beans on the tortilla chips easier.
Chop or shred all the veggies.
Layer the ingredients. This is a great time to get the guests or kids involved. I make two platters with different mixtures of ingredients based on what the guests like.

Set oven to Broil on high.
Broil until the cheese is melted and slightly browned. If you want to make sure the ingredients are piping hot preheat the oven to 350 and bake for 10 minutes, then broil for 3-5 minutes.
Serve with fresh cilantro, jalapeno, and/or Sour cream. Add a few extra chips if needed.
Cut into squares or scoop to serve. These Nachos are so Yummy you will want a nacho night every night.
