Mouthwatering Monday almost did not have a recipe this week. We had our Spring Birthday Party this weekend and I made all the favorites from Pasta Salad to Pineapple Chicken Skewers and my Brother made the Best Steaks Ever. I planned to take photos of all the steps for each recipe and have all the Mouthwatering Monday recipes photographed for the next few weeks. That did not happen. I’m not kidding guys this really is the best chicken nacho recipe ever and you can customize it to fit exactly what your family or friends love. I made this the first time because the Kiddo really wanted nachos from a restaurant and I did not have the time or money to waste. I started with small basic Nachos with chicken, cheese and tortilla chips and then started customizing adding refried beans and olives. The beauty is that if you like jalapeno – add them. If you do not like beans do not add them. I get requests for these nachos for almost every party. The Kiddos friends as if we are having nacho’s when they are deciding which day to hang out. I love a good Crock-Pot Meal and this one is YUMMY! Chicken and veggies are a staple in my house. The Kiddo loves Chicken, but it can get a little boring if you eat it every other night. So I have to find fun and easy new ways to cook it. This recipe is flavorful and easy , I hope you enjoy it.

Recipe:
6 Red Potatoes
2 chicken breasts
1 Package frozen green beans
1 small onion
Garlic to taste
Half of a red, Yellow, and Orange Bell Pepper
2 Banana Peppers or to taste
1 package whole Mushrooms
1 Packet of Ranch dressing mix
1 cup or less of water or chicken broth
5 tbsp of Butter
Additional Garnish goodness:
Sprinkle Cheese of your choice
Sour Cream

My potatoes are different sizes. Try to cut your pieces the same size for even cooking. You can substitute red potatoes with your favorite potato.

I cube the chicken to make serving easier. You can put the chicken breasts in the crock-pot whole if you like.

Frozen veggies work just as well as fresh in this recipe. Remember to subtract a little from the water or broth for each frozen element. As the veggies defrost and cook they naturally add water to the mix.

Dice the onion. I used raw onion for ease of cooking. To add a depth of flavor sauté the onions before adding it to the crock-pot.

There are three ways to prep your fresh garlic cloves. Mince the with a grater, chop, or smash the garlic. You can also use garlic powder, pre-minced and jarred or whole cloves if you like. I used raw, but you can sauté the garlic with the onions for more flavor.

Julienne your peppers. If you dice the peppers they will melt away while cooking.

I have a garden and I grow Banana Peppers among other veggies. To save the peppers for the winter months I grind them in the food processor and freeze individual portions. *Approximately 2 peppers

I like to use whole mushrooms because the Kiddo does not like mushrooms and it is easier for her to pick them out. You could chop them if you like. A tip when cleaning mushrooms. Do not submerge them in water or rinse them. Use a paper towel or soft clean cloth to rub the dirt off. Mushrooms are like sponges and they absorb the water and discolor. they can also become slimy.

I like powdered ranch mix. You can use a ranch dressing, Pre-mixed dressings tend to separate while cooking and you have to stir the crock pot often when you use them. I add my creamy ingredients as garnish.

You can substitute chicken broth for the water. You can also use less water when using frozen veggies.

Mix the ranch with your water or broth. If you want a more intense flavor add the water first and the dry mix to the top layer.

You can substitute a few Table spoons of Coconut oil. Remember the coconut oil changes the flavor a little.

Set for 4 hours on high or 6 hours on medium.

Layer the ingredients.

Layer the potatoes in the bottom of the pot with the chicken over them. The potatoes take the longest to cook and having them on the lowest layer helps.

I like adding the frozen ingredients in the middle of the pot.

If you cook your onions and garlic add them last or right before the ranch mix.

Layer the fresh veggies over the frozen and the dices onions and garlic.

Pour the ranch mix all over the top layer to distribute the flavor evenly.

I add the butter last. As the butter melts it drips through all the layers adding flavor.

If you choose the dry mix sprinkle it on last for a more intense flavor.

Close the lid and let it cook.

My family got their first servings before I could take a picture. Remember – If you want less liquid add less water or broth.

To add a little tangy flavor to complement the ranch add a dollop of sour cream. Sprinkle a little grated cheese for added depth.
